This was a collection of desserts that I made for my husbands work, and to give away as gifts at CHRISTmas time. The desserts were a big hit, I alternated the colors of the cherries just for contrast. Everyone fell in love with all of the desserts that I made. These dessert recipes are also in my cookbook, and here is the one for the cheese cake bars. You can start your collection of holiday desserts early, although you do not need to wait till the holiday to make them.

Ingredients For cheesecake bars

  • crust ingredients
  • 2 c
    all purpose flour
  • 2/3 c
    brown sugar , packed
  • 2/3 c
    cold butter, no substitutes
  • 1 c
    chopped walnuts or pecans
  • FILLING
  • 2 pkg
    8oz. cream cheese, softened
  • 1/2 c
    sugar
  • 1/4 c
    milk
  • 2 Tbsp
    lemon juice
  • 1 tsp
    vanilla extract
  • sliced maraschino cherry halves
  • 2 lg
    eggs, room temperature

How To Make cheesecake bars

    Preheat oven to 350 degrees F. Combine flour & brown sugar in a bowl. Cut in butter until mixture resembles coarse crumbs. Stir in nuts. Reserve 1 cup of crumb mixture. Press remaining crumbs into the bottom of ungreased 13 X ( X2 inch baking pan. Bake at 350 degrees F. for 12 minutes.

    Meanwhile, in a mixing bowl, beat cream cheese & sugar until light & fluffy. Add eggs one at a time, beating well after each addition. Beat in milk, lemon juice & vanilla. Pour cream cheese mixture over crust. Sprinkle with reserved crumbs. Bake 25 to 30 minutes longer or until edges are lightly browned and filling is almost set.

    Cool in pan on wire rack. Cut into squares. Garnish with cherries, if desired. Store in refrigerator. Recipe makes about 24 bars.
