Ingredients

  • 1 c
    shortening
  • 3/4 c
    sugar
  • 2 large
    eggs
  • 1 c
    mashed cooked carrots
  • 2 c
    sifted flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 3/4 c
    shredded coconut

How to Make Carrot Coconut Cookies

Step-by-Step

  1. Mix well together : shortening , sugar , eggs and mashed carrots.
  2. Sift together : flour , baking powder and salt ; Mix into carrot mixture.
  3. Add coconut to mixture.
  4. Drop by teaspoonfuls onto a greased cookie sheet.
  5. Bake @ 400° for 10-12 minutes.
  6. Frost with orange frosting.Orange Seven Minute Frosting
