Caramel Coconut Marshmallow Balls

A sweet and salty treat for all ages! These are a terrific after school (or after work) snack. The Test Kitchen
28caramels (about 8 oz.)
1/4 cbutter or margarine
2 Tbsphalf 'n half or milk
1 1/2 cconfectioners sugar, sifted
1 csalted peanuts
2 cminiature marshmallows
1 cflaked coconut
How to Make Caramel Coconut Marshmallow Balls
- In 2-quart glass measure, place caramels, butter and half 'n half.
Cook at HIGH 5 minutes in the microwave, or until melted and smooth, stirring after 3 minutes.
Stir in sugar until smooth; add peanuts.
Stir in marshmallows just until lightly coated.
- Mixture will be cool enough to shape caramel mixture into balls; roll in coconut until well coated.
Store in covered container.
