apple-oatmeal spice cookies

These cookies are so good and the apple butter is an easy trick to keep the cookies flavorful. My little charges love these cookies I make 2 different batches one with nuts and one without as one is allergic to nuts, so I put chocolate chips in hers.

Ingredients For apple-oatmeal spice cookies

  • 3/4 c
    brown sugar, packed
  • 1/2 c
    granulated sugar
  • 1/4 c
    margarine,room temperature
  • 3/4 c
    apple butter or you can use applesauce
  • 1 lg
    egg
  • 2 Tbsp
    milk 2%
  • 2 tsp
    vanilla
  • 1 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 1/4 tsp
    nutmeg
  • 3 c
    quick or old fashioned oatmeal, uncooked
  • 1 c
    diced dried mixed fruit or raisins or nuts

How To Make apple-oatmeal spice cookies

    Heat oven to 350^. Lightly spray cookie sheets with cooking spray. Beat sugars and margarine in large bowl until well blended. Add apple butter, egg.milk and vanilla; beat well. Combine dry ingredients in a small bowl; mix well. Add to creamed mixture; mix well. Stir in oats and dried fruit,raisins or nuts.(or a mixture of all). This dough will be soft. or moist. Drop dough by rounded Tablespoonfuls onto cookie sheets Bake 10-12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets. Transfer to wire rack; cool completely. Store tightly covered.
