After making and canning homemade apple butter, I looked for several recipes to use it in. I couldn't find a cookie recipe that I was in love with so I came up with these. These cookies will spread when baking so make sure you chill the dough prior to cooking and in between batches. These cookies are sweet but not too sweet and I used Granny Smith apples for the chopped apples because of the tartness they provide.

Moist, cake-like, tender, with bits of apple in every bite, we loved these cookies. They're perfect for fall. This cookie recipe does not call for any spices. The flavor comes from the apple butter. They spread a little while baking, so consider that when placing on the baking sheet. If you want a new fall dessert or need to make something for a bake sale, give these scrumptious cookies a try.

Ingredients For apple butter oatmeal cookies

  • 1/4 c
    butter, unsalted
  • 1 c
    packed brown sugar
  • 1 lg
    egg
  • 3/4 c
    quick oats
  • 1/2 c
    raisins
  • 1 c
    all-purpose flour
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 tsp
    baking powder
  • 2 Tbsp
    milk
  • 1/2 c
    small diced apples (Granny Apple preferred)
  • 1/2 c
    apple butter

How To Make apple butter oatmeal cookies

  • Cookie sheet lined with parchment paper.

    Preheat oven to 350 degrees and line cookie sheet with parchment paper.
  • Butter and sugar creamed together.

    In a large mixing bowl cream butter and sugar just till combined. Do not overmix or go over 40 seconds with a mixer.
  • Egg, apple butter, and oats added to the bowl.

    Beat in apple butter, eggs, and oats.
  • Dry ingredients in a bowl.

    Mix dry ingredients in a separate bowl.
  • Combining wet and dry ingredients.

    Gradually add the dry mixture to the creamed mixture along with the milk.
  • Apple and raisins folded into batter.

    Stir in apples and raisins.
  • Ready to chill the dough.

    Chill dough for at least 20 minutes in refrigerator.
  • Scoops of dough on a cookie sheet.

    Drop by teaspoonfuls onto cookie sheet.
  • Cooled Apple Butter Oatmeal Cookies on a cooling rack.

    Bake for 15 to 17 minutes. Cool on the sheet for a few minutes before removing to a wire rack to cool.
