I love coconut macaroons. The small bit of flour gives them a little more density and better texture, even though traditional macaroons do not contain flour. I make these for Christmas cookie trays.

Anne's coconut macaroons are delicious! They have a crunchy, toasted coconut base with a sweet, soft coconut center. Easy to prepare, these macaroons are going to be a big hit on your Christmas cookie tray. If you want to make them even better, drizzle with a little bit of chocolate or caramel.

Ingredients For favorite coconut macaroons

  • 1 pkg
    sweetened, flaked coconut, 14 oz
  • 2/3 c
    granulated sugar
  • 1/2 c
    all-purpose flour
  • 1/2 tsp
    salt
  • 4
    egg whites
  • 1 tsp
    vanilla extract
  • 1 Tbsp
    coconut oil, melted

How To Make favorite coconut macaroons

  • Spraying a baking sheet with non-stick spray.

    Preheat oven to 325. Spray baking sheets lightly with vegetable oil spray.
  • Combining coconut, sugar, flour, salt, egg whites, vanilla, and coconut oil.

    Combine coconut, sugar, flour and salt. Add egg whites and vanilla and coconut oil. Stir just until blended.
  • Scooping mounds onto the baking sheet.

    Using small cookie scoop or teaspoon, place mounds about 2 inches apart on prepared baking sheets.
  • Macaroons baking in the oven.

    Bake for 20 minutes or until edges are golden and set.
  • Cooling macaroons on a wire rack.
