I used to have a recipe for these cookies. I don't remember where it originated. But, I made them at Christmas, & my mother-in-law loved them. I made them a few times & then misplaced the recipe. After I joined JAP, I started thinking of them. So, I found a few similar recipes online & one here. I put together a recipe from those. I had it saved on my computer. Unfortunately, I had not posted it to JAP, at that time. So, our computer crashed, and I lost the recipe again. I repeated the process again & now have a recipe to post.

Ingredients For a different carrot cookie

cooking spray, shortening, or parchment paper

1 cbutter, softened or shortening (as is) or half of each

1 csugar

2 lgeggs
-
1 lg7 1/2 to 8 oz. jar junior baby food carrots

1 tspvanilla extract
-
1 tsplemon extract (optional)
-
2 3/4 csifted all-purpose flour or unbleached all purpose flour
-
1 Tbspbaking powder
-
1/2 tspor more to taste, of ground cinnamon (optional)

1/4 tspsalt
- **********ORANGE GLAZE**********

1/4 corange juice
-
1 1/2 Tbspgrated orange peel (preferrably organic)

2 1/2 to 3 cconfectioners' sugar
How To Make a different carrot cookie

1Preheat oven to 350 degrees. Prepare cookie sheet, by spraying with cooking spray, greasing with shortening, or use parchment paper. Also, prep ahead for glazing area, by placing cooling racks over waxed paper.

2Cream together soft butter (and/or shortening, as is), with sugar, and eggs, until well mixed. Stir in baby food carrots. Mix, until carrots are well incorporated.

3Stir together dry ingredients, in a separate bowl, until well combined.

4Add dry ingredients to creamed mixture. Mix well. Chill, at least 1 hour. (Chill time, not included in prep time.)

5Bake 10-12 minutes, or until firm and edges are golden brown. Let cookies cool in pan for 1 minute.

6Glaze: While cookies are still warm, put them on the prepared rack with wax paper underneath. Glaze them by mixing orange juice & grated peel together; then, pour into the confectioners' sugar. Stir, until it starts thickening & is smooth. Glaze or ice cookies, making thicker for using as icing.
