Ingredients For mint-topped low-fat brownies

  • 2 Tbsp
    butter
  • 1 oz
    chopped unsweetened chocolate
  • 1/2 c
    flour
  • 1/3 c
    cooking cocoa powder
  • 3/4 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 c
    buttermilk
  • 1 c
    sugar
  • 1/4 c
    egg beaters egg substitute
  • 1 tsp
    vanilla
  • 2/3 c
    frozen fat-free whipped topping, thawed
  • 2
    drops green liquid food coloring
  • 2
    drops peppermint extract

How To Make mint-topped low-fat brownies

    Heat oven to 350. Line an 8" pan w/ foil, letting some foil hang over sides. Spray the foil w/ cooking spray.

    In microwave-safe bowl, microwave butter and chocolate in 10-second intervals, stirring until smooth. In lg bowl, combine flour, baking cocoa, baking powder, baking soda and salt. W/ mixer on low speed, beat buttermilk, sugar, egg beaters and vanilla in another bowl.

    Beat in the flour mix, then beat in the chocolate mix. Pour mix into pan and bake 25 min, or until a toothpick inserted in center comes out clean. Cool 10 mins. using foil, lift brownies from pan, cool completely. Cut into 25 squares. In bowl, stir together whippedd topping, food coloring and extract. Dollop topping onto each brownie.
