1Preheat oven to 350 degrees. If not using muffin papers, grease and flour muffin tin.
2Mix boiling water, oatmeal and butter....let stand 10 minutes. Add white sugar, brown sugar and eggs....beat well.
3In separate bowl, whisk together four, baking soda, salt and cocoa.
4Mix wet ingredients with dry until well blended...do not overmix. Pour into prepared muffin tins...or, I like to use paper muffin cups in the tins. Evenly distribute the chocolate chips over the muffins. I always bake all my muffins for 20 minutes and add minutes as needed as to not overbake.
5filling the muffin cups 3/4 full, I get 18 regular muffins or 9 when using the jumbo muffin tins. These freeze wonderfully.
