Blue Ribbon Recipe

A rich, decadent, and basic chocolate truffle recipe that's easy to make and perfect for a dark chocolate lover. The truffles are creamy and just melt in your mouth. We love how this can be tailored to your taste by using a different liquor. We opted for raspberry and loved the pairing with the chocolate. Bailey's, Kahlua, Grand Marnier, or even rum would be delicious too. Get creative when decorating the truffles. You can use nuts, cocoa powder, colored sugar, sprinkles, coconut, chocolate drizzle, etc. For a pretty presentation, place the truffles in mini cupcake liners after they're decorated. A box of these is a perfect gift for a loved one. Better than store-bought!

How To Make basic chocolate truffles

Test Kitchen Tips
To form the truffles, we used a small cookie scoop and it was a perfect size.
  • Bringing cream to a boil.
    1
Add the cream to a saucepan and bring to a boil. Remove from heat
  • Pieces of chocolate and butter in a bowl.
    2
Place the chocolate and the butter into a bowl.
  • Hot cream poured over the chocoalte.
    3
Pour the hot cream over the chocolate and let set 2 minutes.
  • Adding alcohol to the melted chocolate.
    4
After 2 minutes, whisk and then add the alcohol.
  • Letting the ganache set up.
    5
Allow the mixture to firm up.
  • Scooping balls of ganache.
    6
After the ganache has set, pipe out the truffles onto a parchment-lined baking sheet in equal amounts (you can also use a small ice cream type scoop, but these make much larger truffles). Let set until firm, about 30-45 minutes.
  • Truffles rolled.
    7
Using rubber gloves and cocoa powder, roll the firm ganache into balls. They don't have to be perfectly round, as they will be rolled again. Use the cocoa powder to keep the ganache from sticking to your gloves.
  • Rerolling chilled truffles.
    8
    Chill, then roll again.
  • Decorating the truffles.
    9
Let the truffles come to room temperature before dipping or decorating.
