My boys and I made these tonight. Nolan, being 10, helped with most. Jordan, being 6, helped with stirring and the sprinkles. It's their favorite cupcake.

People are going to love these easy semi-homemade cupcakes. When they bake the brownie batter and yellow cake mix magically swap places. If kids help to make this, they'll be amazed at the inside when they take a bite. A dollop of fluffy cream cheese frosting makes them really delicious. Sprinkles make them fun and festive. Great for a bake sale, pot luck, or simple weeknight dessert.

Ingredients For yellow cake and brownie topped cupcakes

  • 1/2 pkg
    yellow cake mix
  • 1 1/2
    eggs
  • 2 1/2 Tbsp
    vegetable oil
  • 1/2 c
    water
  • 1/2 pkg
    brownie mix with chocolate chunks
  • 1 1/2
    eggs
  • 2 1/2 Tbsp
    vegetable oil
  • 1/2 c
    water
  • 12
    cupcake wrappers
  • 2 can
    whipped cream cheese icing
  • Few dash
    candy sprinkles

For the 1/2 an egg in the recipe, we whisked an egg in a small bowl. Then divided that between the cake and brownie batter. This recipe makes 12 cupcakes. You can easily double the ingredients (which would use the entire box of cake and brownie mix) to make 24 cupcakes.
  • Mixing yellow cake mix ingredients together.

    Mix the first four ingredients (yellow cake mix, eggs, vegetable oil, water) together in a bowl.
  • Cupcake pan with liners.

    Line a cupcake pan with liners.
  • Yellow cake mix in cupcake liners.

    Spoon in 2 tablespoons of the yellow cake mix.
  • Mixing brownie batter ingredients together.

    Mix the next 4 ingredients together (brownie mix, eggs, vegetable oil, water) to make the brownie tops.
  • Brownie batter on top of yellow cake mix.

    Spoon in 2 tablespoons on top of the yellow cake mix.
  • Cupcakes baking in the oven.

    Place in oven preheated to 350 F.
  • Testing to see if cupcakes are done.

    Bake for about 25 minutes or until a toothpick comes out clean. Take out of the pan and let cool for an hour.
  • Icing place in a piping bag.

    Take the whipped cream cheese icing and put it in a baggie or piping bag. Cut the corner.
  • Icing the cupcakes.

    Start to ice the cupcakes.
  • Sprinkles added to the cupcakes.
