Too Much Chocolate? Cake
He seems to think there is too much chocolate in this cake, but I think it is amazing. It is really, really rich.
Icing recipe came from a friend's mom, so I can't take credit for that wonderful addition to the cake.
1 pkgchocolate cake mix
1 4oz pkginstant chocolate pudding mix
1 to 2 cchocolate chips (to taste)
1/2 cstrong black coffee
1/3 capplesauce, unsweetened
16 ozsour cream
CHOCOLATE SOUR CREAM ICING
1 cchocolate chips
1/4 cbutter (not softened)
1/2 csour cream
1/4 tspsea salt
2 1/2 cconfectioners sugar (may need up to a 1/2 cup more depending on consistency)
How to Make Too Much Chocolate? Cake
- Preheat oven to 350 degrees and grease & flour a 10 inch bundt pan.
- In a large bowl, combine cake mix, pudding, eggs, sour cream, applesauce and coffee until well blended. Fold in chocolate chips.
Pour batter into prepared pan and bake for 1 hour.
Cool about 10-15 minutes in pan then move to a cooling rack. Cool completely before frosting.
- To make the icing
Melt the chocolate chips and butter in a double boiler.
Remove from heat and pour into a large heat safe mixing bowl.
Add the sour cream, vanilla and salt and beat with a mixer.
Slowly beat in the confectioners sugar until it reaches a good spreading consistency.
