that's the spice! cake

This is a quick way to whip up a spice cake for family and friends. I use 1 cup of apple sauce and 1/2 cup homemade apple butter. The apple butter gives the cake a richer spice taste.

  • 1 box
    spice cake
  • 1 1/2 c
    apple sauce or apple butter
  • 2/3 c
    vegetable oil
  • 3 large
    eggs
  • 1 tsp
    cinnamon
  • 1/2 tsp
    nutmeg
  • 1/4 tsp
    ginger
  • vegetable oil for greasing pan
  • flour for dusting pan
  • powdered sugar for dusting cake

How To Make that's the spice! cake

    Place a rack in the center of the oven, and preheat the oven to 350 degrees G Grease a Bundt pan with vegetable oil and dust the pan with flour. Shake the excess flour from the pan, and set it aside.

    Place all ingredients in a large mixing bowl and blend with an electric mixer on low speed until the ingredients are just combined, 30 seconds. Increase the mixer speed to medium and beat until smooth, 1 to 1½ minutes. With a rubber spatula, scrape down the sides of the bowl. Pour the batter into the pan, and place the pan in the oven.

    Bake the cake until the top springs back when lightly pressed with a finger, 40 to 45 minutes. Remove the pan from the oven to cool 15 minutes. Run a knife around the edges of the pan, shake the pan gently to loosen the cake, and invert onto a rack to cool.

    After cake has cooled, sift a bit of confectioners’ sugar over the top
