This is a super easy, semi-homemade type of cake that I find is perfect for this time of year. With pumpkin and apples used, two of fall's essential flavors are sealed inside this delicious, decadent dessert.

All of fall's essential flavors are wrapped into one dessert. We loved every bit of this spiced caramel apple upside-down cake. It's moist and full of spiced pumpkin flavor. Apple slices add another dimension of fall taste with a hint of caramel flavor. Perfect served with a big scoop of vanilla ice cream.

Ingredients For spiced caramel apple upside down cake

  • CARAMEL APPLE TOPPING
  • 4 Tbsp
    unsalted butter
  • 1/2 c
    light brown sugar
  • 1/4 tsp
    cinnamon
  • 1 pinch
    nutmeg
  • 3 sm
    apples
  • CAKE
  • 1 box
    spice cake mix
  • 15 oz
    canned pumpkin
  • 3
    eggs
  • 1/2 tsp
    vanilla
  • 1 pinch
    each cinnamon, nutmeg and allspice

How To Make spiced caramel apple upside down cake

  • Greasing a pan while oven preheats.

    Grease and flour one 9" cake pan - this cake is NOT a double layer cake but just a single layer - and preheat oven to 350 degrees.
  • Melted utter, brown sugar, cinnamon, and nutmeg in baking pan.

    Place butter, brown sugar, cinnamon, and nutmeg in a saucepan and bring ingredients to a boil and allow to continue boiling for 30 seconds. Remove from heat and spread evenly over the bottom of your cake pan.
  • Thinly sliced apples over the caramel.

    Peel, core, and thinly slice the apples. Sprinkle over your caramel evenly. Move on to mixing the cake.
  • Batter ingredients mixed together.

    Mix ALL cake ingredients together until thoroughly moistened. A few small lumps are all right, but no really large ones. :D The batter will be quite thick.
  • Batter poured over the apples and baking in the oven.

    Spread batter over apples evenly, and place in oven. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean and cake springs back after touched.
  • A slice of Spiced Caramel Apple Upside Down Cake on a plate.

    Let cool for 15 minutes or so, then loosen cake from the sides of the pan by sliding a butter knife along the edges. Tip over onto a plate and Enjoy! For further enjoyment, serve with freshly whipped cream spiced with a hint of cinnamon, sugar and vanilla and some caramel sauce for drizzling!
