Kids wanted chocolate cake last night, for National Chocolate Cake Day. I'm dieting so didn't want a big cake sitting around to tempt me. So, I made one of my favorite moist little cakes and a creamy home made chocolate frosting. It's gone, so I'm thinking they liked it just a little. LOL

1 cflour

1 csugar
-
1/2 chershey's cocoa

1 tspeach - baking powder & baking soda

1 chot water
-
1egg
-
1/4 cmelted butter
- FROSTING

3 Tbspbutter, softened

3 - 3 1/2 Tbspcocoa, unsweetened

1 1/4to 1 1/2 cups - confectioners' sugar or enough to reach desired consistency

1/2 tspvanilla
-
3 Tbspcream or enough to reach desired consistency
How To Make ~short order cake ~

1Preheat oven to 350 degree F. Grease an 8 inch baking pan. In a medium mixing bowl, combine sugar, flour, cocoa, baking powder and baking soda. Whisk on the hot water. Add egg and melted butter and mix well. Pour into prepared pan. Bake for 30 - 35 minutes or until pick comes out clean. Cool on rack. Icing: In a medium bowl, sift together the sugar and cocoa. Set aside. Cream butter until good and smooth. Beat in sugar alternating with cream. Beat in vanilla. May need to add more sugar and cream to reach your desired consistency.

2Frost cooled cake and serve. For an added treat I added some pecans to the top.
