Blue Ribbon Recipe
Light and lovely, this sweet green delight has just the perfect amount of pistachio flavor (which I love). Add a few drops of green food coloring for an even more vibrant green color.

INGREDIENTS FOR THE CAKE:

1 boxyellow cake mix

3eggs

1 cwesson oil

1 boxinstant pistachio pudding

1 cmilk or ginger ale (i use milk)

1 cpecans, chopped fine

INGREDIENTS FOR THE ICING:

9 ozcarton of cool whip

1 cpowdered sugar

8 ozcarton of sour cream

1/2 cmilk

1 boxinstant pistachio pudding
How to Make Pistachio Cake
- Mix all ingredients for cake well and pour into a greased 13x9-inch pan. Bake 25-30 minutes in oven preheated to 350 degrees. Let cool completely before icing.
- For icing: Fold, do not beat, ingredients together in a bowl with a spatula. Ice cake. Place in refrigerator after icing.
