4eggs

3/4 cvegetable oil

10 oz7-up

8 ozcrushed pineapple, drained (small can)

1 boxvanilla instant pudding mix (4.6 oz.)

1 tsprum flavored extract (optional)

1/2 cpecans, chopped (optional)

FROSTING
-
1 boxpowdered sugar (lb.)

8 ozcream cheese, softened
-
1/2 stickbutter, softened
-
1 tspcoconut extract
-
1 ccoconut, flaked
How to Make Pina Colada Cake
- Beat eggs until creamy. Add oil, 7-Up, dry cake mix, pudding mix, and rum flavored extract. Mix well and add drained pineapple; stir in pecans. Bake in a 13x9 in. greased baking dish at 350 degrees for 25 minutes or as directed for a 13x9 in. cake pan. Cool and frost.
- Frosting: Beat together the cream cheese and butter until it is a creamy blend. Add sugar slowly while beating. Mix in the coconut extract. Frost cake and sprinkle with coconut. Option: If you prefer, add coconut to icing before frosting.
