By using a diet softdrink as the wet ingredients in the cake, you cut a lot of calories! It gives you a very moist, yummy cake. I like to make this cake in mini-muffin cups to have ready-to-go servings on hand when I want a sweet treat.

How to Make Pepsi Max Chocolate Cake
- Preheat oven to 350 degrees. Spray mini-muffin cups with non-stick spray.
- Mix all ingredients on medium speed until well blended.
- Use a small ice-cream type scoop to fill muffin cups. This makes 48 cupcakes.
- Bake at 350 degrees for 20 minutes or until center of cupcakes is done.
- These are excellent served with a small dollop of whipped cream and a couple slices of banana! Yum!
