When I worked at the school, we had a potluck breakfast once a month. I took this cake and everyone raved over it and none was left. I have searched and searched for this recipe and finally found it today. Actually I bought the peaches yesterday and thought if I didn't find it I'd wing it on my own and try to rediscover it. Found it today and will be making it again soon so I can supply a picture. Believe me, this is a great cakr to make because of the yeast in the recipe.

1 3/4 c
unsifted flour
3/4 c
1/2 tsp
1 Tbsp
dry yeast
2 Tbsp
margarine, softened
1/2 c
hot tap water
egg at room temperature
1/4 c
brown sugar
1/2 tsp
1/4 tsp
2 Tbsp
1 can(s)
16 oz. drained sliced peaches
confectioners sugar frosting

How to Make Peaches N Crumb Cake


  • 1Combine 1/2 cup flour, sugar,salt and undissolved yeast.
  • 2Add 2 tablespoons softened margarine and hot tap water to dry ingredients. Beat 2 minutes at medium speed, scrape sides often
  • 3Add egg and 1/2 cup flour, beat on high 2 minutes
  • 4stir in 1/2 cup flour to make stiff batter
  • 5spread in 9" greased baking pan.
  • 6Combine remaining 1/4 cup flour, brown sugar, cinnamon, nutmeg and cut in 2 tablespoons margarine until crumbly. Sprinkle over cake
  • 7Arrange peach slices over top
  • 8Cover and let rise 1 hour or until doubled in draft free, warm place.
  • 9Bake 400 degrees 25 minutes or until done.
    Cool in pan 10 minutes, then turn onto wire rack or serving platter ( I kept mine in baking dish)
  • 10Drizzle with confectioners sugar frosting.
