this was my grandmother's
favorite cake to make for me
when I was younger,
I changed it a little but it still
reminds me of her cooking.

Ingredients

  • 1 1/4 c
    boiling water
  • 1 c
    oatmal
  • 1/2 c
    butter melted
  • 1 c
    sugar
  • 1 c
    brown sugar
  • 1 tsp
    vanilla
  • 2
    eggs
  • 1 1/2 c
    flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/4 tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 1/2 c
    coconut
  • 1 can(s)
    pineapple diced and drained
  • 1/4 c
    butter melted
  • 1/2 c
    brown sugar
  • 1 c
    coconut
  • 1 can(s)
    reserved pineapple juice from can

How to Make Oatmeal Cake

Step-by-Step

  1. preheat oven to 350.
    In medium bowl, pour boiling water over oats, let stand for 20 minutes.
  2. add butter, sugars, and vanilla; mix together well.
    add eggs, stir til blended.
  3. add in flour, baking soda, salt, cinnamon, and nutmeg; mix til blended.
    fold in coconut and pineapple, pour into a 13x9 greased pan.
  4. bake for 50 minutes, when out of oven poke holes into top of cake with the end of a spoon.
    pour topping over cake, let cool cut into squares.
  5. Topping:
    combine all ingredients, spread evenly over cake.
