this is my favorite recipe for italian creme cake. bakes up beautiful and is so delish. works great for decorating, weddings etc. I hope you will enjoy this version. xoxoxo

Ingredients

5 large
eggs
1/2 c
butter
1/2 c
vegetable shortening
2 c
sugar
1 tsp
baking soda
1 c
buttermilk
2 c
all purpose flour, sifted 2 times
1 c
coconut
1 c
chopped nuts (i use pecans or walnuts)
1 tsp
vanilla extract
1 tsp
coconut extract

CREAM CHEESE FROSTING

1 pkg
cream cheese, room temperature. 8 oz.
1/2 c
butter, room temperature
1 lb
powdered sugar (3 1/2 cups)
1 tsp
almond extract

How to Make Mrs. Dowell's Italian Creme Cake

Step-by-Step

  • 1Preheat oven to 350*.

    Separate eggs and beat whites until stiff. Set aside.
  • 2Cream butter, shortening and sugar.
    Add egg yolks one at a time, beating well after each addition.
    Dissolve soda in buttermilk; add alternately with flour. Beat well. Add coconut, nuts and extracts.
  • 3Fold in stiffly beaten egg whites. Pour into 3 9inch baking pans. using 2 cups of batter for each pan.
    Bake at 350* for 25 minutes. Cool completely, then frost with cream cheese frosting. keep in the frig.
