As a young girl we were always visiting someone on Sunday afternoons. Daddy, Mom and I in the ole black Ford traveling the windy roads in Greembrier and Monrow Co. of West Virginia. Whether it be family or friends there was always good food. I was probably about 8 years old and we spent one Sunday afternoon with our Pastor Brown and family. Mrs. Brown had the best potatoe salad and the cake looked so "Yummy", but when she told my Mom and I it was a Mayonaise Cake my tummy kinda churned. I thought that sounded gross! My Mom tried it and she said "Oh, DollBaby you will really love the flavor if you'll just give it a try." I trusted my Mom with all my heart so I took a bite and my eyes got so big and I shook my head that I wanted a slice of my very own. As it turned out this cake went home with us and it turned out to be my favorite cake. After about the next two years of my Mom asking me what kind of cake I wanted for my Birthday, she knew what my answer would be so that is what she made me every year until I married and moved. Tomorrow my Mom turns 89 and I have made her this "Our favorite cake" for her Birthday. It is befitting for her this year and my tribute for her as she has been very sick and we were unsure she was gonna make it to her special day this year. Thanks for all the recipes and good cooking passed down to me. I Love you Mom!

Ingredients For mayonaise cake

  • 3/4 c
    salad dressing
  • 1 c
    sugar
  • 2 c
    plain flour
  • 1 c
    water
  • 4 Tbsp
    cocoa powder
  • 2 tsp
    baking soda
  • 1 tsp
    vanilla extract
  • FROSTING
  • 3 Tbsp
    flour-plain (rounded)
  • 1 c
    shortening
  • 1 c
    sugar - powdered
  • 1 c
    milk
  • 1 tsp
    vanilla extract
  • 1 pinch
    salt

How To Make mayonaise cake

    Mix salad dressing, sugar, water and soda. Slowly add flour and cocoa until ingredients are mixed up real good. Then add vanilla and mix until batter is blended. Pour the mixture into 2 round cake pans greased and floured. Bake cake at 350o approximately 30 - 35 minutes or until a toothpick comes out clean.

    Blend flour and milk in small sauce pan on low to medium heat until it thickens. Set aside and let cool. Then cream together sugar and shortening, then add the vanilla and salt. Pour the flour and milk mixture into the above and beat with your mixer until creamy. The longer you beat it the creamier and better it gets.
