If you've never tried adding beer to your cakes, and think it sounds weird, you don't know what you are missing. Beer doesn't leave behind a harsh alcohol flavor into cakes, if you are worried about that. Instead, it adds a slight hit of acidity to the sweetness of the cake. Added to that, the frothiness of the beer reacts beautifully when baking, adding more air to your sponge, making for a truly light, fluffy cake. Try it!

Ingredients For mango and summer wheat ale cupcakes

  • FOR CAKE
  • 3 1/4 c
    cake flour
  • 1 1/2 Tbsp
    baking powder
  • 1/4 tsp
    salt
  • 1 c
    sugar
  • 3/4 c
    pureed fresh mango
  • 1 c
    summer wheat ale (i used blue moon brand)
  • 1/2 c
    unsalted butter
  • 4 lg
    eggs, room temp
  • 1 Tbsp
    pure vanilla extract
  • FOR FROSTING
  • 16 oz
    (2pks) cream cheese, room temp
  • 8 oz
    (2sticks) unsalted butter, room temp
  • 2 tsp
    pure vanilla extract
  • 1/4 tsp
    orange extract
  • 1/4 tsp
    salt
  • 4 c
    confectioners' sugar

How To Make mango and summer wheat ale cupcakes

    Preheat oven to 350'F Line cupcake tray with liners. Set aside.

    For Cake: Beat butter in a large mixing bowl. Gradually add sugar to butter mixture and continue to beat until fluffy. Add one egg at a time into butter mixture, completely incorporating each one before adding the next.

    In another large mixing bowl, sift flour, salt, and baking powder together. Set aside.

    In a measuring cup, mix vanilla and mango together. Beat mango into butter mixture until completely incorporated.

    Add one half of your flour mixture to your butter mixture, and lightly incorporate. Add beer to the batter, mix until incorporated. Then, finally, add remaining flour to the batter, incorporate until it is just combined. (Do not over mix).

    Pour batter out into cupcake tray. Bake for about 20 minutes, or until a tooth pick comes out clean. Cool completely on a wire wrack before frosting.

    For Frosting: In a large mixing bowl, beat cream cheese and butter together until super fluffy. Add vanilla, salt, and orange to butter mixture, and beat until incorporated. Gradually add confectioners' sugar to the mixture, beating until it forms fluffy peaks. Add food coloring is desired. You might want to chill frosting for 10-minutes before spreading onto cakes. Always make sure cakes are completely cooled before frosting.
