Ingredients For key lime cheesecake

  • 1 3/4 c
    graham cracker crumbs
  • 5 Tbsp
    melted butter
  • 1 c
    plus 1 Tbsp of sugar
  • 3 pkg
    cream cheese, 8 oz each
  • 1 tsp
    vanilla extract
  • 1/2 c
    lime juice (5 limes) or if using purchased juice 1/4 cup
  • 3 lg
    eggs
  • whipped cream

How To Make key lime cheesecake

  • Graham cracker crumbs, butter, and sugar mixed together in a bowl.

    Preheat oven to 350. Combine crumbs, butter, and 1 Tbsp sugar in a bowl. Stir well to coat all crumbs. Keep it crumbly.
  • Graham cracker crumbs pressed into a pan.

    Press the crumbs onto the bottom and halfway up the sides of an 8" springform pan.
  • Graham cracker crust baking in the oven.

    Bake crust for about 5 minutes and set aside.
  • Cheesecake filling ingredients blended until smooth.

    In a large bowl combine cream cheese, 1 cup sugar, and vanilla extract. Mix with electric mixer till smooth. Add the lime juice and eggs and continue to beat till smooth and creamy.
  • Cheesecake filling poured into the pie crust.

    Pour filling into crust.
  • Key lime cheesecake baking in the oven.

    Bake for 60 to 70 mins. If the top is turning light brown, it's done.
  • Cooked cheesecake cooling.

    Remove from oven and allow to cool until room temperature. Then put uncovered into fridge.

    When chilled, remove the pan sides and cut. Serve with whipped cream.
