How to Make Healthy Coconut Cake
- Preheat oven to 325 degrees. Spray 9x13 glass dish with cooking spray.
- Mix cake mix and Sprite until well blended. Pour into pan and bake 30 minutes.
- While cake is baking, mix water, splenda and coconut extract and set aside.
- Poke holes in hot cake with a fork. Pour water mixture over cake and allow to cool completely.
- Spread cool whip on cooled cake and sprinkle with coconut.
- Refrigerate until ready to serve.
