This is a recipe I came up with to make one of our favorite treats a lot healthier. It's soooo tasty, but healthy enough I don't mind saying "yes" when the kids ask for seconds! It's 100% whole grain and quite low in sugar. It's also easy to make this gluten-free by using gluten free oats.

Ingredients For healthy cinnamon streusel coffee cake

  • CAKE
  • 1/2 c
    butter, room temp.
  • 1/2 c
    honey
  • 1/4 c
    sugar(i use turbinado or demerra)
  • 2
    eggs
  • 2 c
    oat flour(process oats in food processor until flour-like consistancy)
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 c
    yogurt or sour cream(i use greek yogurt, plain)
  • TOPPING
  • 1/4 c
    oat flour
  • 1/4 c
    sugar
  • 2 tsp
    cinnamon
  • 2 tsp
    vanilla

How To Make healthy cinnamon streusel coffee cake

    Preheat oven to 350F. Grease and flour a bundt pan.

    Beat together the butter, honey, sugar and eggs. In a separate bowl whisk together the oat flour, baking powder, baking soda and salt. Add the flour mixture to the butter mixture alternately with the yogurt, mixing after each addition.

    Mix all topping ingredients together. Spoon half the batter into the pan. Sprinkle evenly with half of the topping. Spoon dollops of remaining batter over topping and gently spread evenly. Sprinkle with remaining topping. Bake about 30 min. until cake tests done. Cool in pan for 10 minutes then turn out onto rack. Place a serving plate over cake and invert cake onto serving plate so topping is up.
