How to Make Gluten Free Grandmas Spice Cake

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Grease and rice flour a 9 x 13 pan, or two 8 inch pans for a layer cake.
  3. Whisk all the dry ingredients together and blend well in your mixer bowl.
  4. Mix all the wet ingredients well, and add to the dry ingredients beating on medium speed for two minutes.
  5. Pour into prepared pans.
  6. Bake until tester comes away clean.

35 to 40 minutes for the layer pans or 40 to 45 minutes for the 9 x 13 pan.
  7. When the tester comes away clean, then remove and place on a wire cooling rack and leave for five minutes before turning out. Place on wire rack and completely cool.
  8. I like a coffee glaze on my cake.
Some like a cream cheese frosting, and others like a thick caramel frosting.

I make cupcakes with this batter too.
