I love orange slices candy, and the idea of having them in a cake was so tempting I just had to try to see if I could make it in a GF version. Generally I'm not fond of nuts in a cake, so I left out the pecans and put in chocolate chips! YUM!

Ingredients For gf orange galore cake

  • CAKE
  • 1 box
    favorite gluten free yellow cake mix
  • 1 lb
    dates, chopped
  • 1 bag
    orange slices candy (14-16 oz)
  • 1 c
    shredded coconut
  • 1 c
    chocolate chips
  • 1 tsp
    orange zest
  • 1-2 Tbsp
    coconut flour
  • GLAZE
  • 6 oz
    frozen concentrate orange juice
  • 1 c
    sugar
  • 1/2 tsp
    orange zest
  • 2 Tbsp
    orange liqueur (optional)

How To Make gf orange galore cake

    Chop the orange slices candy. Toss together in a large bowl with dates, coconut, chocolate chips, 1 tsp. orange zest, and about 2 T. coconut flour, till everything is coated with the flour. Set aside.

    Follow the directions on the package of your favorite GF cake mix. Mine used about 3/4c. oil (I was out of oil so I used a combination of coconut oil and melted butter), 3 eggs, and 1 cup water or milk (I soured my milk with 1T cider vinegar).

    Following the box instructions I beat the cake mix ingredients as directed. Then stirred in the candy mixture with a wooden spoon.

    Spoon the batter into a prepared bundt pan (I love my silicone bundt!). Bake at 250* for 2 1/2-3 hours.

    When the cake is nearly done, combine orange juice, 1/2 tsp orange zest, sugar and orange liqueur (if desired) in a small saucepan. Bring to hard boil over med. heat, stirring often. Remove from heat.

    When the cake comes out of the oven, immediately pour the glaze mixture over the hot cake. Let the cake stand and cool to room temp. Refrigerate for two to three hours, or overnight if you wish, until glaze is set.

    Turn cake out onto plate and serve.

    NOTE: 1) I will reduce the amount of coconut next time, or just leave it out: I don't think it adds anything, and competes with the orange -- not what I was looking for. 2) I used semi-sweet chocolate chips, and it was just right. 3) This cake is better if it rests overnight. 4) Next time, for the glaze, I'm going to try 1c. favorite orange juice blended with 2c. confectioners sugar, 1t. orange zest, and 1T. orange liqueur.
