I love recipes that lend themselves to adaptation. Feel free to substitute whatever fruit you may have on hand or prefer. If you're using frozen fruit do not thaw it before adding it to the recipe. Add more cream cheese if you want. I've substituted 1/2 c of sour cream or vanilla yogurt for the cream cheese with wonderful results. Feel free to add any spices or flavorings that compliment the fruit you're using. I've also added 1/4 c of oats to the topping to give it a yummy, heartier texture. Any way you bake up this delicious and easy cake I know your family will enjoy it as much as mine!

This fruit-filled coffee cake is perfect for summer. It's a moist, buttery cake with a fruity, tangy, and creamy filling. Each slice is bursting with blueberries. A light dessert for a hot summer day. To add a bit of sweetness, top it with a dollop of whipped cream. Yum!

Ingredients For fruit and cream cheese coffee cake

  • 1/4 c
    butter, softened
  • 2/3 c
    sugar
  • 1
    egg
  • 1 1/4 c
    all-purpose flour, divided
  • 1/2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/2 c
    milk
  • 1 1/2 c
    fresh or frozen blueberries or any other fruit you like.
  • 3 oz
    cream cheese cut into small pieces
  • TOPPING
  • 1/4 c
    all-purpose flour
  • 3 Tbsp
    brown or white sugar
  • 2 Tbsp
    butter

How To Make fruit and cream cheese coffee cake

  • Creamed butter and sugar in a bowl.

    For the batter, in a large mixing bowl, cream butter and sugar.
  • Incorporating an egg into the sugar.

    Beat in egg.
  • Dry ingredients mixed into the butter and sugar.

    Combine 1 cup flour, baking powder, and salt; gradually add to creamed mixture alternately with milk.
  • Blueberries coated with flour in a bowl.

    Toss blueberries with remaining flour.
  • Stirring in blueberries and cream cheese.

    Stir blueberries and cream cheese into creamed mixture. The batter will be thick and lumpy with the bits of cream cheese.
  • Batter poured into a baking dish.

    Transfer to a greased 8-in. square baking dish.
  • Flour, sugar, and butter coarsely combined in a bowl.

    For the topping, in a small bowl, combine flour and sugar. Cut in butter until crumbly.
  • Topping sprinkled over the batter.

  • Coffee cake baking in the oven.
