These are one of my husband's favorite cookies. You may think "fall" because of the pumpkin, but these are great any time of the year. I've been making them for over 20 years & my recipe card is tattered & dirty. So happy that I can post it here for everyone to enjoy and it will be easier for me to keep up with, too!

Ingredients For frosted pumpkin spice cookies

  • 1/2 c
    shortening
  • 1 c
    sugar
  • 2
    eggs, beaten
  • 1 c
    solid pack pumpkin
  • 2 c
    sifted flour
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • 2 1/2 tsp
    cinnamon
  • 1/2 tsp
    nutmeg
  • 1/4 tsp
    ginger
  • 1 c
    raisins
  • 1 c
    chopped nuts (optional)
  • FROSTING
  • 2 c
    confectioners sugar
  • 1 Tbsp
    lemon juice (or 1/2 teaspoon lemon extract)
  • just enough milk for spreading consistency

How To Make frosted pumpkin spice cookies

    Preheat oven to 350 degrees.

    Cream shortening; gradually beat in sugar. Add eggs and pumpkin; mix well.

    Sift flour, baking powder, salt, & spices together. Add to pumpkin mixture; mix well. Add raisins and nuts.

    Drop by heaping teaspoonfuls onto greased baking sheets. Bake about 15 minutes or until firm to the touch. Remove cookies, cool, and frost. (I like to make the frosting more the consistency of a glaze. To do so just add enough water or milk to thin the frosting).
