Cranberries are an important crop in New England. This recipe produces a beautiful and delicious cake. Love coffee cake with my coffee in the morning. Nice to make for Christmas morn while opening presents. This recipe and picture came from allrecipes. I would like it with almonds and almond extract.I will put a little almond flavoring in the icing as well. I have another cranberry coffee cake posted but it is different but similiar to this one, can never have to many cranberry ones, well thats my theory. Hope you enjoy it too !

Ingredients For cranberry swirl coffee cake

  • 1/3 c
    chopped walnuts (or almonds)
  • 1/2 c
    butter or margarine, softened
  • 1 c
    sugar
  • 2
    eggs
  • 1 tsp
    almond extract
  • 2 c
    all-purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 Tbsp
    salt
  • 1 c
    sour cream
  • 1 can
    16 oz whole cranberry sauce ~divided
  • GLAZE:
  • 3/4 c
    confectioner's sugar
  • 2 Tbsp
    milk
  • 1/2 tsp
    pure vanilla extract

How To Make cranberry swirl coffee cake

    Sprinkle walnuts (or almonds) into a greased 10" fluted pan. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each. Stir in almond extract.

    Combine the dry ingredients, add to creamed mixture alternately with sour cream. Spread half the batter over walnuts. Top with half of the cranberry sauce. Reapeat layers.

    Bake 350 degrees F for 50-55 minutes or until toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

    Glaze: In a small bowl, combint glaze ingredients until smooth, drizzle over cake.
