Ingredients For chocolatechip cupcakes wth coconut pecan frosting

  • 7 Tbsp
    butter, cold
  • 1/2 c
    brown sugar, firmly packed
  • 2
    large eggs
  • 3/4 c
    self rising flour
  • 1/2 c
    chocolate chips, mini
  • 1 Tbsp
    pure vanilla extract
  • COCONUT PECAN FROSTING
  • 3
    egg yolks
  • 1 can
    evaporated milk
  • 1 1/4 c
    brown sugar, firmly packed
  • 1 1/2
    sticks of butter
  • 1 Tbsp
    coconut extract
  • 1/4 tsp
    salt
  • 2 1/2 c
    coconut, flaked
  • 2 1/2 c
    pecans roasted and chopped

How To Make chocolatechip cupcakes wth coconut pecan frosting

    Preheat oven at 375.Line a 12 hole muffin pan with 12 liners. Place the butter, brown sugar, vanilla, eggs and flour in a large bowland beat it together until just smooth. Fold in the chocolate chips. Spoon the batter into paper liners.

    Bake in the preheat oven for 15 to 20 minutes, or until wellrisen and golden brown. Cool them completely and decorate with the coconut pecan frosting and more chocolate chips.

    For the frosting: Combine egg yolks, evaporated milk, and brown sugar in a saucepan. Add butter, and cook over medium heat, stirring constantly, until thick, about 10 minutes. Pour through a fine sieve into a bowl.

    Stir in coconut extract, salt, coconut, and pecans. Let cool completely. Frosting can be refrigerated in an airtight container for up to 1 day; bring to room temperature before using.
