Ingredients

  • 2 c
    flour
  • 1-1/2 c
    sugar
  • 1/2 c
    light brown sugar
  • 1 c
    pecans, finely chopped
  • 2 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 Tbsp
    plus 1 tsp. cinnamon
  • 1/2 tsp
    allspice
  • 1/4 tsp
    nutmeg
  • 4
    large eggs
  • 3/4 c
    oil
  • 1 tsp
    vanilla
  • 2 tsp
    orange extract
  • 1/2 c
    vanilla greek yogurt
  • 2-1/2 c
    grated carrots
  • CREAM CHEESE FILLING

  • 1
    {8 ounces) cream cheese, softened
  • 1/2 c
    sugar
  • 1
    large egg
  • 1 tsp
    lemon juice
  • 1/2 tsp
    vanilla
  • 3 Tbsp
    flour
  • GLAZE

  • 1
    (4 ounces) cream cheese, softened
  • 2 Tbsp
    butter, softened
  • 2 Tbsp
    orange juice
  • 2 tsp
    lemon juice
  • 1 tsp
    orange extract
  • 1/2 tsp
    vanilla
  • 2 c
    sifted powdered sugar

How to Make Carrot Cake with Cream Cheese Filling and Glaze

Step-by-Step

  1. Cream cheese filling: Beat the cream cheese and sugar until light. Beat in remaining filling ingredients until smooth. Set aside.
  2. In a large bowl, mix all of the dry ingredients together. In a separate bowl, gently whisk eggs, then stir in remaining wet ingredients just to combine. Do not overmix.
  3. Stir wet ingredients into dry ingredients just until moistened, then stir grated carrots until evenly combined.
  4. Spoon 3 cups batter into a greased and floured bundt pan. Spoon cream cheese filling over batter and smooth, but do not touch sides of pan. Top with remaining batter.
  5. Bake at 350 degrees for 45 minutes, cover with foil, then reduce heat to 325 degrees and bake for 25 to 30 minutes more. Cool in the pan for 10 minutes, then transfer to wire rack to cool completely.
  6. Using an electric mixer, cream together all of the glaze ingredients, except powdered sugar, on medium speed for 1 to 2 minutes or until completely smooth.
  7. Add sifted powdered sugar and beat until smooth. Place the glaze in the refrigerator for 5 to 10 minutes before using.
  8. When cake has cooled, drizzle glaze over cake.
