Growing up in rural Oklahoma we had the only banana tree for miles. I took great care watering and weeding around it that when it didn't make any bananas the 1st year I was very upset. The next summer, My Uncle Roy, being the family trickster bought some bananas, put them on the tree and told me they grew over night. Of course I believed everything Uncle Roy told me. Mom made a banana bundt cake an with the fruit and I savored every single bite. I came up with this recipe in honor of my dad and uncle, who have since passed. Oh yes Uncle Roy also had me watering a round rock that grew too!

    lemon juice
  • 1 box
    pound cake mix (1lb box)
  • 3 1/2 oz
    box instant banana cream pudding mix
  • 2/3 c
    evaporated milk
  • 2 large
    eggs
  • 1/2 c
    melted butter
  • 1/2 c
    toasted pecans, chopped
  • 8
    toasted pecans, halved
  • 3 1/2 oz
    box butterscotch pudding mix, cook and serve kind
  • 2 Tbsp
    brown sugar
