I have loved this cake since I was a kid! It would make appearances at family holiday dinners and I could not wait to eat some. Years later I was tracking down the recipe and was asked, "Why do you want that? It's no big deal just a cake mix?" This cake is the real deal! So moist, and full of banana flavor. The frosting is perfect! When I make it my brother-in-law begs for a cake to call his own.

This banana cake recipe is simple, but sometimes simple things are the best! Banana brings a natural sweetness and a hint of fruity flavor to this treat. Caramelizing the brown sugar for the frosting adds an extra layer of sweetness and creates almost a caramel flavor. The smooth frosting is a nice contrast to the moist, crumbly banana cake. Each bite is sweet and buttery. If you don't have ripe bananas, her tip is great and works wonderfully!

Ingredients For banana cake

    overripe bananas, peeled and sliced
  • 4 lg
    eggs
  • 4 Tbsp
    butter, melted
  • 1 pkg
    yellow cake mix
  • 1 c
    milk
  • FROSTING
  • 4 Tbsp
    butter
  • 1/4 c
    light brown sugar, packed
  • 2 Tbsp
    milk
  • 1 c
    powdered sugar

How To Make banana cake

  • Mixing bananas and eggs.

    Preheat oven to 350. Spray a 9X13 pan or disposable pan. Beat together bananas** and eggs with a mixer on medium until bananas are mashed; about 1 min. **No overripe bananas handy? Place yellow bananas on a cookie sheet and place in the oven. Turn oven on to 350 F. When your oven "beeps" that it is preheated, take out the bananas. The skins will be a little brownish and the bananas will be warm. The heat gets all the sugars and banana flavor ready to get mashed into cake or banana bread recipes.
  • Adding melted butter.

    On low speed, pour in melted butter.
  • Adding cake mix.

    Add in cake mix.
  • Adding milk.

    Add milk and beat on medium for 2 minutes.
  • Batter poured into a baking dish.

    Pour batter into pan (disposable foil pan works great for this recipe).
  • Baking the banana cake.

    Bake for 30-40 minutes until the cake is firm in middle.
  • Baked cake cooling.

    Let cool in the pan.
  • Heating brown sugar, milk, and butter.

    Frosting: In a small saucepan, combine the brown sugar, milk, and butter. Cook on medium-high heat until a full boil, stirring constantly.
  • Whisking in powdered sugar.

    Remove from heat and add powdered sugar. Whisk until no trace of sugar remains.
  • Frosting spread over the cooled cake.

    Pour over cooled cake and spread. Let cool. This makes a thin layer of frosting. DOUBLE frosting recipe if you like to have more!
  • Banana Cake ready to be sliced.
