This cake is a sweet, crunchy treat to bake at apple-picking time! We used Winesap apples, and it turned out great.

We can't think of a better way to start the day than with a slice of this apple streusel coffee cake. It's a quick and easy to make cake that's layered with apple slices. On top is a buttery cinnamon spice crumble. The crumble melts into the apples and caramelizes them. Biting into the soft cake and caramelized apples is heavenly. Make sure to serve this warm... it's a wonderful coffee cake.

Ingredients For apple streusel coffee cake

  • COFFEE CAKE
  • 1 c
    all-purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • !/2 c
    sugar
  • 1/2 stick
    butter, unsalted
  • 1
    egg
  • 1/4 c
    plain yogurt
  • 1 tsp
    vanilla extract
  • 2 c
    thinly sliced peeled cooking apples
  • TOPPING
  • 1/4 c
    all-purpose flour
  • 1/4 c
    brown sugar, firmly packed
  • 1/2 tsp
    cinnamon
  • 1/2 stick
    butter

How To Make apple streusel coffee cake

  • Spraying square pan with non-stick spray.

    Preheat oven to 400 degrees. Spray 8' sq. pan with cooking spray.
  • Flour, baking powder, baking soda, and salt in a bowl.

    In a small bowl combine 1 cup flour, baking powder, baking soda, and salt; mix well and set aside.
  • Butter and sugar in a mixing bowl.

    In a large bowl combine 1/2 stick butter and sugar; beat til light and fluffy.
  • Vanilla and egg added to the mixing bowl.

    Add egg and vanilla and blend well.
  • Slowly adding flour and yogurt.

    Alternately add flour mixture and yogurt to butter mixture, beating well after each addition.
  • Batter and apple slices in the baking dish.

    Spread batter in sprayed pan. Arrange apple slices over batter.
  • Topping ingredients in a bowl.

    In a small bowl, combine all topping ingredients. With a pastry blender cut in butter until crumbly.
  • Sprinkling topping over apples.

    Sprinkle topping evenly over apples.
  • Baked Apple Streusel Coffee Cake cooling.

    Bake at 400 degrees for 25 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes. Enjoy!
