This cake is a sweet crunchy treat to bake at apple picking time! We used Winesap apples and it turned out great.

We can't think of a better way to start the day than with a slice of this apple streusel coffee cake. It's a quick and easy to make cake that's layered with apple slices. On top is a buttery cinnamon spice crumble. The crumble melts into the apples and caramelizes them. Biting into the soft cake and caramelized apples is heavenly. Make sure to serve this warm... it's a wonderful coffee cake.

1 call-purpose flour

1 tspbaking powder

1/2 tspbaking soda

1/2 tspsalt

!/2 csugar

1/2 stickbutter, unsalted

1egg

1/4 cplain yogurt

1 tspvanilla extract

2 cthinly sliced peeled cooking apples

TOPPING
-
1/4 call-purpose flour
-
1/4 cbrown sugar, firmly packed

1/2 tspcinnamon

1/2 stickbutter
How to Make Apple Streusel Coffee Cake
- Preheat oven to 400 degrees. Spray 8' sq. pan with cooking spray.
- In a small bowl combine 1 cup flour, baking powder, baking soda, and salt; mix well and set aside.
- In a large bowl combine 1/2 stick butter and sugar; beat til light and fluffy.
- Add egg and vanilla and blend well.
- Alternately add flour mixture and yogurt to butter mixture, beating well after each addition.
- Spread batter in sprayed pan. Arrange apple slices over batter.
- In a small bowl, combine all topping ingredients. With a pastry blender cut in butter until crumbly.
- Sprinkle topping evenly over apples.
- Bake at 400 degrees for 25 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes. Enjoy!
