This recipe is originally called Winter Shortcake but I think it's too yummy to save for next winter, so I've dubbed it Anytime Winter Shortcake. The combination of apple and cherry filling combined with the spicy taste of pumpkin in the cake sound just heavenly. Recipe & photo: Midwestliving.com

Ingredients For anytime winter shortcake

  • SHORTCAKE:
  • 2 c
    all purpose flour
  • 1/3 c
    sugar
  • 2 tsp
    baking powder
  • 1 1/2 tsp
    pumpkin pie spice
  • 1/4 tsp
    salt
  • 1/2 c
    (1 stick) butter
  • 1
    egg, lightly beaten
  • 2/3 c
    milk
  • 1
    recipe apple-cherry filling (see recipe below)
  • 3/4 - 1 c
    whipping cream, whipped
  • APPLE-CHERRY FILLING
  • 1 can
    (21 oz.) apple pie filling
  • 1 c
    frozen tart red cherries
  • 1 tsp
    vanilla extract

How To Make anytime winter shortcake

    SHORTCAKE: In a large bowl, combine flour, sugar, baking powder, pumpkin pie spice, and salt. Cut in butter to resemble coarse crumbs. Mix egg and milk; add to flour mixture and stir to just moisten.

    Spread batter into a greased 8x1-1/2-inch round baking pan. Bake in a preheated 450-degree oven for 18 to 20 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Split into 2 layers.

    APPLE-CHERRY FILLING: In a saucepan, combine apple pie filling and cherries. Cook and stir the mixture until heated through. Remove from heat; stir in vanilla. Spoon half of the warm filling and some whipped cream over first layer. Top with the second layer, the remaining filling and the remaining whipped cream. Serve immediately.
