1 pkgbutter pecan cake mix
3/4 cwhite sugar
1/2 cvegetable oil
1 cpureed pumpkin
1 tspground cinnamon
·pillsbury buttercream frosting
How to Make Anita's Perfect Pumpkin Cupcakes for Dummies
- Preheat oven to 350° F.
Line muffin pan with 24 paper liners or spray with nonstick cooking spray. Also prepare an 8x8" pan with cooking spray.
- Combine all ingredients except frosting and beat until smooth.
Scoop about 1/3 cup batter into each muffin cup.
- Bake for 20 minutes or until toothpick comes out clean when inserted in the cupcakes.
- Allow to cool before frosting. Using a pastry bag to frost cupcakes is the easiest.
- Makes about 24 large cupcakes plus an 8x8" brownie pan. You can also make mini cupcakes, which need to bake about 15 minutes.
