This is a wonderful alternative to plain waffles for breakfast or anytime.If you don't have waffle cooker can use frozen waffles.

Ingredients For stuffed waffles

  • 1 3/4 c
    all purpose flour
  • 1 Tbsp
    sugar
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2
    eggs slightly beaten
  • 1 c
    buttermilk
  • 1/2 c
    milk
  • 1/2 c
    oil
  • 1 c
    chopped tomatoes
  • 3/4 c
    shredded cheddar cheese
  • 6 slice
    cooked and chopped bacon
  • 2 Tbsp
    fresh basil or sage

How To Make stuffed waffles

    In a large bowl stir together flour,sugar,baking powder and salt. In another bowl combine eggs, buttermilk,milk and oil.(For buttermilk mix 1 tablespoon lemon juice or vinegar in a liquid measuring cup. Add enough milk to make 1 cup. Stir let stand 5 minutes then use.)

    Add egg mixture all at once to flour mixture. Stir till moistened. Grease waffle maker. Preheat. Add batter to waffle baker reserving a few tablespoons. Cook till golden. Continue till all batter is used.

    Put on a cookie sheet. Sprinkle with tomato ,cheese,bacon ,basil and pepper.Spoon reserved batter on top to mostly cover toppings. Bake till golden.

    Serve with honey butter ,sour cream and anything of your chose.
