Hubby did not eat his banana's again so making recipes with them. Thought this sounded good, stated out with a recipe for waffle's in my favorite cook book Fanny Farmer, tweaked it here and there and this is what I came up with.

I love this waffles recipe! They are everything a waffle should be... light, fluffy and a little crisp on the outside. These are a great way to utilize overripe bananas. Ingredients

  • 2 large
    bananas (mashed)
  • 2 large
    eggs
  • 1/2 c
    milk
  • 1/2 c
    sour cream
  • 3 Tbsp
    coconut oil
  • 1 1/2 c
    flour
  • 3 tsp
    baking powder
  • 2 tsp
    sugar
  • 1/2 tsp
    salt
  • 3/4 c
    walnuts ( crushed)

How to Make Banana Walnut Waffles

Step-by-Step

  1. Mix the banana, eggs, milk, sour cream and coconut oil in a large bowl.
  2. Stir in flour, baking powder, sugar, and salt. Mix until well blended.
  3. Stir in walnuts.
  4. Heat waffle iron, spray, and pour in batter to fill. Close and bake until waffles are crisp, tender, and brown. Serve.
