Hubby did not eat his bananas again so making recipes with them. Thought this sounded good. Started out with a recipe for waffles in my favorite cookbook Fanny Farmer, tweaked it here, and there and this is what I came up with.

We love this waffles recipe! They are everything a waffle should be... light, fluffy, and a little crisp on the outside. A great way to utilize overripe bananas. They are delicious and can be whipped up in no time. These are tasty with just syrup, but we added sweetened whipped cream, fresh bananas, and walnuts. So good!

Ingredients For banana walnut waffles

  • 2 lg
    bananas (mashed)
  • 2 lg
    eggs
  • 1/2 c
    milk
  • 1/2 c
    sour cream
  • 3 Tbsp
    coconut oil
  • 1 1/2 c
    flour
  • 3 tsp
    baking powder
  • 2 tsp
    sugar
  • 1/2 tsp
    salt
  • 3/4 c
    walnuts ( crushed)

How To Make banana walnut waffles

    Mix the banana, eggs, milk, sour cream and coconut oil in a large bowl.

    Stir in flour, baking powder, sugar, and salt. Mix until well blended.

    Stir in walnuts.

    Heat waffle iron, spray, and pour in batter to fill. Close and bake until waffles are crisp, tender, and brown. Serve.
