I love having these ready to go on workdays. I make 5, wrap in cellophane, and place in the fridge. I have one every day of the week and it's already cooked ahead of time. The turkey sausage, egg whites, and spinach save on calories. Just a half slice of white American adds so much creaminess and flavor without overuse. On your way to work, you can avoid the temptation of stopping at Dunkin' and piling up on empty calories. (Ps I love-hate Dunkin' ;) ) Just grab some salsa & coffee from your Keurig (or coffee pot) and you're out the door!

We're all looking for healthier breakfast options and to simplify our morning routine. These easy breakfast burritos are the perfect option. Using fresh spinach, turkey sausage, and egg whites make a delicious protein-packed, lower-calorie breakfast. The flavor is so fantastic you wouldn't guess it's egg white and turkey sausage. The tiny bit of American cheese adds that melty cheese factor you want in a breakfast burrito. Since these are prepped ahead of time, it's an easy way to avoid the temptation of a not-so-healthy breakfast. It's also economical. We used flour tortillas, but spinach or tomato would be delicious too. If you're low carb, sub a lower carb tortilla.

Ingredients For workday breakfast burritos

  • 5
    flour tortillas or spinach wraps or tomato wraps whichever you choose
  • 1/2 bag
    Jimmy Dean pre-cooked turkey sausage crumbles (9.6 oz bag)
  • 1/2
    carton liquid egg whites (32 oz carton)
  • 1/2
    onion, chopped
  • 2 c
    baby spinach, torn
  • 2 1/2 slice
    white American cheese
  • salsa packets or salsa to take with you
  • salt & pepper

How To Make workday breakfast burritos

  • Browning onions and sausage in a skillet.

    Place a small amount of canola oil or butter in a skillet. Add onions and sausage.
  • Adding sausage to the skillet.

    Add spinach. Heat about 3 minutes.
  • Pouring egg whites into the skillet.

    Add egg whites.
  • Heating until egg whites are cooked.

    Cook on medium heat until done.
  • Adding salt and pepper to the egg mixture.

    Salt and pepper to taste.
  • Half a slice of American cheese on a tortilla.

    Put half slice of white American on each tortilla.
  • A scoop of egg mixture on the cheese.

    Top with cooked mixture.
  • Rolling the burrito.

    Wrap burritos.
  • Burrito wrapped in plastic wrap.
