I have substituted items with great results and they are softer and satisfying. While hoping to cut the fat, add a small amount of sweetness, and improve the texture, I used three different ingredients than I have in the past when making scones: whole wheat white flour, low-fat cottage cheese and honey. They are not the typical full of butter kind, but I love these with coffee for breakfast. Using up things that are in the refrigerator or kitchen cabinet too, is rewarding!

Ingredients For scones - created by beth

  • STIR THESE DRY INGREDIENTS IN A MEDIUM SIZED BOWL:
  • 2 c
    whole wheat white flour, king arthur is what i used
  • 1 c
    a/p flour
  • 4 tsp
    baking powder
  • 1/2 tsp
    freshly ground nutmeg, or a large pinch
  • 1/2 tsp
    powdered ginger
  • STIR AND RUB INTO THE DRY INGREDIENTS:
  • 1/3 c
    honey
  • 1/2 c
    canola oil
  • 1 c
    cottage cheese, lowfat
  • 1/2
    raisins, any kind you like, or craisins, optional.
  • MIX DOUGH WITH YOUR HANDS AND DUMP ONTO A FLOURED SURFACE

    Using a little pressure press on the dough and make a circle, fold over a third of it and continue doing this until all dry ingredients are incorporated. It will be moist but not sticky. Flatten and roll this into about a 10" circle. Using a long knife cut the circle in half, then cut into quarters, and then into twelve wedges.

    Preheat the oven to 400 degrees. Spray a baking sheet lightly with cooking oil. With a spatula place the wedges on the baking sheet evenly spaced and not touching. Bake for 14-15 minutes, on the middle shelf of the oven.

    They will be lightly browned on the bottom. Remove immediately from the baking pan and cool on a rack. Served warm they are fine with our without jam and a hot cup of coffee or tea!
