I was just in Minneapolis - home of Prince and purple rain. I was thinking of the song, Raspberry Beret, and decided to have a breakfast in that vein - and Raspberry Parfait was born. It is also healthy - and only 5 Weight Watchers points!

Ingredients For raspberry parfait

  • 1/2 tsp
    butter
  • 1/2 c
    old fashioned oats
  • 1 Tbsp
    chopped pecans
  • 1 Tbsp
    sliced almonds
  • 1 Tbsp
    unsweetened coconut
  • 1 Tbsp
    honey
  • 1 c
    raspberries (fresh or frozen)
  • 1 c
    plain greek yogurt
  • 2 sprig
    mint - optional for garnish

How To Make raspberry parfait

  • 1
    If using frozen raspberries, thaw ahead of time or in microwave. If using fresh raspberries, rinse and set aside. You will probably need more berries if using fresh.

    Melt butter in skillet. Add oats through honey. Cook over medium-high heat for about 5 minutes, stirring constantly until starting to turn golden. Remove from heat. Cool.

    Layer yogurt, oat mixture and berries in decorative parfait glasses. Garnish with mint springs.
