This is from the 1896 "Fannie Farmer Cookbook" and is the best ever; I don't eat any other waffles! We've had a tradition in our family for many years that we have waffles every Sunday morning. Even though the kiddos are now grown and gone my husband and I still keep the tradition. Great with applesauce and syrup or strawberries and whipped cream!

Ingredients For raised waffles

  • 1/2 c
    warm water
  • 2 1/4 tsp
    active dry yeast
  • 2 c
    warm milk
  • 1/4 c
    oil or melted butter
  • 1 tsp
    salt
  • 1 tsp
    sugar
  • 1 1/2 c
    all purpose flour
  • 1/4 tsp
    soda
  • 2
    eggs
  • MAKE THE NIGHT BEFORE

How To Make raised waffles

    Use a large bowl as the batter will double it's volume.Mix warm water & sugar in the mixing bowl. Sprinkle in the yeast. Stir to dissolve. Let stand 5 minutes until slightly bubbly. Add the warm milk, oil/melted butter, salt and flour. Mix until well blended and smooth. Cover with plastic wrap and let stand over-night at room temperature.

    In the morning beat in the eggs (I leave these out overnight as well to come to room temperature) and the soda. Mix well. Pour onto hot waffle iron and cook according to your iron's directions.
