I saw something like this on a commercial for Taco Bell & thought the idea was great. Handheld breakfast with a crispy outside. (I don't eat at Taco Bell for obvious reasons.) So I decided to make my own. I know the corn sounds kind of weird, but the sweetness goes very well with the savory-ness of the bacon & egg mixture. It may seem like a lot of steps, but you can do a lot of these things at the same time, so it really is quick to make. I hope you try it!

Blue Ribbon Recipe

A delicious, different approach to a breakfast sandwich. There are some great flavors in this recipe! Corn is an unusual ingredient but it adds a touch of sweetness that compliments the smokey bacon. Let's not overlook the cheesy goodness too. These are quick and easy to make and assemble. Great if you're serving a crowd or need an easy grab and go breakfast.
