My husband, Anthony loves pancakes and since we have been married he always makes the pancakes. I haven't had too much luck in making good pancakes. Since he has started eating foods for his new health regiment we came across this recipe in "Thin Kitchen" cookbook. It is another recipe that works with the P90X diet. These are very healthy for you and I personally have yet to find out what "wheat germ" does for our body but it must be good. Anyway, my husband enjoys them and so does my picky 8 year old nephew Noah who has been staying with us. Don't forget to add some fresh fruit too.

Ingredients For healthy pancakes

  • 1 1/2 c
    whole wheat pastry flour
  • 2 lg
    eggs, lightly beaten
  • 1/4 c
    canola oil
  • 2 c
    low-fat milk
  • 2 tsp
    baking soda
  • 1/2 c
    wheat germ

How To Make healthy pancakes

    In mixing bowl, mix eggs with oil and low-fat milk. Stir in baking soda, wheat germ, and flour; mix until well blended.

    Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle. Brown on both sies, turning once. Use fresh fruit and a small amount of real maple syrup, honey or molasses for your pancakes and don't forget to add the calories for your toppings. For pancakes alone: Serving size is 3 pancakes: calories 210, fat total: 9 grams, saturated fat: 1 gram, carbohydrates 24 grams, fiber 4 grams, protein: 8 grams.
