I love to eat fat free yogurt with granola. Regular granola is really fattening and sugary. This is a granola mixture I use to make my yogurt parfaits. It is low in sugar and carbs. 1 gram of sugar and about 14 carbs per 1/3 cup serving. No need to feel guilty about topping your yogurt off with this granola. Add to cooked oatmeal or eat as a cereal. . Enjoy!

Ingredients

  • 4 c
    rolled oats
  • 3/4 c
    sliced almonds
  • 1
    egg white beaten to soft peaks
  • 3/4
    sugar free maple syrup
  • 1/2 c
    unsweetened coconut flakes
  • 11/2 Tbsp
    cinnamon, ground
  • 1/2 tsp
    ground ginger
  • 1/2 tsp
    ground cloves
  • 1/2 c
    low sugar dried cranberries
  • NOTE: YOU MAY ADD OTHER VARIOUS NUTS LIKE PECANS IF YOU WISH. DON’T FORGET TO ADD IN THE CARBS

How to Make Granola Low Sugar Version

Step-by-Step

  1. Preheat oven to 325 degree’s.
  2. Parchment line a large sheet pan. Spray with oil spray like butter flavored Pam.
  3. Soak cranberries in boiling water for 15 minutes. Drain and discard water.
  4. In a large bowl add cranberries, oats, coconut, and almonds. Combine ingredients well.
  5. In another bowl beat egg white until soft peaks form. Stir in the spices and sugar free maple syrup.
  6. Porous your mixture over oats combine well well tossing several times.
  7. Pour onto parchment lined sheet pan. Spread mixture well on pan.
  8. Place in oven. Set timer for 10 minutes. Mix every 10 minutes while baking. Bake until almonds and oats are toasted golden brown. Approximately 50-60 minutes.
  9. Remove from oven. Let cool on pan. Store in zip top plastic storage bag in fridge for up to 2 weeks.
  10. Note: use to make yogurt parfaits. Mix into cooked oatmeal, or serve with milk as cereal. .
