My husband's grandmother loved to cook for large family and I was fortunate to receive copies of the best loved recipes. This was one of the breakfast staples in her house.

Ingredients For grandma's banana pancakes

  • 1 1/2 c
    sifted flour
  • 3 1/2 tsp
    baking powder
  • 3/4 tsp
    salt
  • 1 Tbsp
    sugar
  • 1
    egg well beaten, room temperature
  • 1 1/2 c
    milk, room temperature
  • 3 Tbsp
    melted shortening or unsalted butter
  • 1 c
    finely diced bananas
  • 1/2 tsp
    vanilla

How To Make grandma's banana pancakes

    If using electric griddle heat to 380 degrees and preheat. If using pan turn to medium heal and preheat the pan.

    Mix and sift the flour, baking powder, salt and sugar.

    Combine the egg, milk, vanilla and shortening/butter in separate bowl.

    Add wet mixture to dry ingredients then mix until just fully combined.

    Gently fold in banana.

    Pour small amounts of batter on greased cooking surface and cook until lightly golden. Serve and enjoy
