This recipe is from Sister/Aunt Viola 7/14/1976 who got it from "Mrs. Fire News" submitted by Mrs. Kenneth Batterberry 4/1967.

This is the only pancake recipe I use since 1976. They are so light and fluffy!

Ingredients

  • 1 qt
    buttermilk
  • 2 tsp
    salt
  • 6 Tbsp
    sugar
  • 6
    eggs, slightly beaten w/fork
  • 3 tsp
    rounded, baking powder
  • 2 tsp
    rounded, baking soda
  • 4 c
    flour, or a bit more
  • 4 Tbsp
    butter, melted
  • 1 tsp
    vanilla

How to Make Buttermilk Pancakes- Mrs. Batterberry

Step-by-Step

  1. First whisk dry ingredients together. Make a "well"; add remaining ingredients.
  2. Beat really hard ( or use electric mixer). Batter may be made night before. Will keep "a couple of days" in refrigerator.
  3. Use 1/4 cup or 1/3 cup batter per pancake. Don't need to grease griddle, but you may prefer to lightly grease it.
